Gross disrespect

Brutole restaurant is grossly disrespectful in so many ways. The owner, Ilias is disgustingly inhuman, he treats his employees like animals not people. He verbally abuses his employees calling them such things as \"f#!$ing stupid, idiot, moron.\" If you make a mistake he will scream, \"what the $#@! is wrong with you, are you $#@!ing dumb?\" If you attempt to apologize, he yells at you for apologizing. I once heard him ask another employee \"what medication her husband had to take to have sex with her?!\" I can understand an employer being dissapointed if you have been trained correctly and continue to make mistakes, however there is ABSOLUTELY NO training regimen. Matter of fact if u read \"the symptoms of a bad job\" section of this site, Brutole meets ALL the criterea! When he hires, you have to work a couple shifts with no pay to \"see if it works out.\" Checks are PURPOSELY withheld from employees until you ask for them multiple times and when you do get them 90% of the time they bounce! You don\’t even get half off any food you order, and if you come in to eat on your night off you don\’t get a discount at all!! The sleazbag actually makes money from his employees!If you are asked to cover a shift and you can\’t you do not have a job at all.The jerk is obviously in some financial trouble, his home is in the newspaper under the forclosure listings at least every other month. One day while I was working a woman from the dept of revenue came in and DEMAMDED she speak to \"Ilias IMMEDIATELY,\" and he still made her wait just to spite while he chit chatted it up in the kitchen. Now that I have described how he degrades and grossly disrespects his employees I will go on to describe how he does the same to his customers.
I have worked in the industry for 13 years and NEVER have i seen a restaurant more dirty! The walls in the kitchen are covered with dried up caked on food splatter. The olive oil, which is 80% vegetable oil because it\’s cheaper, is kept in an uncoverd container which has unknown crumbs and dirt circulating through it. None of the fruits or vegetables are EVER washed. Every single shelf where pots and pans are kept are covered in dust, dirt, and slimy greasy restaurant scum. The floor and shelves in the food and beer walkins have never been cleaned therefore also covered in scum. Now for the front of the house… Thank god the lights are dimmed otherwise everyone would see how dirty ALL the glassware and flatware is. The water pitchers are emptied and stored on the floor at night and NEVER washed! If the wrong glass of wine is ordered the bartenders HAVE to pour it back into the bottle to be resold, as well as marrying bottles of wine together. The ice bins are NEVER cleaned out and have a layer of MOLD and MILDEW on the bottom as well as the beer coolers. Amongst all of these healthcode violations and laws broken, one of the worst practices is that since Ilias owes so much money to his vendors the bartenders HAVE TO MAKE A WEEKLY trip to the liquor store to buy alcohol! The bathrooms ALWAYS smell like sewerage, freezing cold, and ALWAYS out of either soap, toilet paper, or paper towels! Lastly, at least ONCE a month 4 or 5 cars are broken into in the parking lot and the cheap bastard wont spend the money for any surveilance. Bottom line, Ilias is a scumbag and only likes to keep scumbags employed at his restaurant! Don\’t work there it\’ll only add a whirlwind of negativaty to your life.

It is so unfortunate that you have these feelings about your previous employer. Which brings me to my point. He is your previous employer for a reason. You are not an employee of his, for some reason or another. If it makes you feel better to write at the length and with the disdain that you did, then chances are your next job will also be a “former employer”, sooner than later. I am not questioning the validity of your information, I am simply saying that if your posted comment, helps you rationalize your termination, or that you quit, (but Im going to guess that you were terminated) then you are a petty, insecure person, who doesn’t have enough confidence, nor insight, to see that maybe you brought this on yourself…. That is in the case that you were fired. If you quit because of your stated information, and still feel the need to post on this site, well, then you are still a petty, insecure person, who finds solace in writing on a web site. Which is pretty unfortunate, seeing that you have been in the business for, Im sorry, 13 years?
Everything posted here is completely true and what I find incredible is that this has been occuring since the restaurant opened. It is absolutely amazing that this has been allowed to transpire over the course of many years and the restaurant is STILL opened. MANY or most of this employers former employees (except Bobby, of course) have left on bad terms due to Iliases business practices and the fact that he rips people off.He never even reported my taxes during the time that I worked there; I essentially worked off the books. There have been numerous labor board complaints. Seriously, if any owner and manager deserved to be trashed on this site, it truly is the owner of Brutole. House is in forclosure you say? Serves him right!!! I feel sorry for anyone who has worked there. A nice space and decent clientele (does anyone still actually go there?); but it is restaurant hell. I don’t have enough time to write about the shit that went down when I worked there. And there are MANY of us!!!!!!

The space is great and the food was decent, but he can’t get decent help there. Any good servers he did have-he f#&*ed over. The manager, his personal lacky who he rescued from drug addictions over a decade ago, is the biggest tool ever. Sexual harassment, anger management, incompetent to manage people because he never had experience previously….This restaurant is a shame because it could have been awesome, but over the past few years the cheap stupid tool of an owner ran it into the ground. Who knows how it stays open, I think there must be money laundering going on-it is definitely shady!!!!!! DON”T ever work here.

I can only imagine the look on Ilias’s face if he has read what others have posted here and as we know, it is not even the moral majority! As for the comment from ‘jenny’; honey, there are MANY MANY MANY of us who have been totally screwed by this asshat and absolutely NONE of us are petty or insecure. As mentioned by one of the other commentators, this is one employer who definetely deserves being exposed and more. It is unfathomable that this jerk still has the doors open to this restaurant. And how the general public and the venue’s loyal following cannot see the reality of the way thigs are run here, who knows. If you are reading this Illias, Fuck You! You deserve every bad thing that happens to you. I feel sorry for your kid. You have been so horrible to people all across the board and you have a shallow disrespectful and arrogant attitude! You don’t even have a college education and your interpersonal skills are SHIT! How does your wife put up with you? HHHMMM let’s see after that house is forclosed upon…LOL
I would LOVE to see the look on Ilias’s face when he reads these posts because it is all TRUE and more! There are so many ex employees who were screwed by this guy! I have to say that there is so much more to the story and it is unbelieveable that he actions have gone unnoticed by the customers. What is the clientele like these days? Working for this guy was horrifying and he makes these insane comments to his employees that are completely off the cuff. He never took taxes from my tips the whole time that i worked there so I essesentially worked under the table. I hope more people see this post and add to it! This guy deserves all that he has coming as he is a cocky, arrogant, shallow, warped, immature, and dishonest loser! It is inconceivable that he can sleep at night and I feel sorry for his kid or is it kids….How does his wife put up with him? Probably not for much longer if the house does go into forclosure. I could not agree more with this post. I was one of those given an unpaid “let’s see if this fits” period, during which I had to work full hours and practically beg for my first pay check after two weeks on the job. I still haven’t gotten my last one, or my W-2s - and I quit there two years ago. One waiter asked me to have sex with him in the parking lot and would rub his tips down my back saying “NOW will you go out with me” in front of Ilias AND in front of customers at the bar and no matter how many times I complained, nothing happened. That is probably because my supervisor/manager was doing coke in the bathroom at least once every shift. It was my first food service/bartending job and if I can say one good thing about this place, its that the people who love Ilias enough to put up with his crap (besides Bobby) are good at what they do. There was one great waiter whose name I don’t remember, and the bartender - Kathleen - though a total tyrant, was a complete professional with customers and worked so hard. Ilias would pretend to be nice to me when I first started working there, I think because they so desperately needed people, and then would berate me for any mistake calling me a f***ing idiot/moron. When I complained of the sexual harrassment directly to him he said it was part of being a young, pretty girl in the business and to toughen up. He never gave any of the employees a discount on food (sometimes 10%), but he and Bobby would make themselves full meals and have drink after drink at the bar after closing while I had to stay until they were finished in order to clean up.
I can completely agree with and back up the horrible state of the kitchen. Random crap floating in the olive oil, rotten vegetables in the freezer, mold in the ice buckets. His food is great and he obviously has a gift, but sometimes I was afraid to eat there. Its just sad to see so much culinary talent go to waste on a despicable, disrespectful, incompetent man who would hold our paychecks for weeks because he and his wife had just put in a new pool and he was using OUR wages to pay for it.
I am so glad someone put up this post. I feel vindicated.
Also, I was told that if I took a Sunday morning off for my grandmother’s funeral, I would be fired (even though Bobby was there to bartend while Doug “managed”). I was stupid enough to skip her burial and spent the entire morning at an empty bar while Doug sat and texted on his cell phone. That was the last straw for me.
VINDICATED?! Not quite darling! I had worked with Doug and during that time he was pretty stand up. I heard he left becasue Illias screwed him out of a good chunk of money and did not pay him back. I also know there are a few ‘regular’ customers who now refuse to EVER return due to this asshole owner’s tantrums and embarrasssing way he treats the staff. I am surprized that he was able to put a pool in seeing as the house was rumored to be in threat of forclosure. I hear his wife is horrificly insecure and demanding. Serves him right. No surprize that Bobby still works there……The sexual harrassment? I cuold only imagine how he reacted if it were one of his daughters, or stepdaughters - whatever. He would have been all over that shit. I’ve heard that he cannot keep good people. Ilias does have the necessary culinary skills, especially if he has a good team backing him. The filth was a bit too much to bear though. I’ve seen moldy mildew in the bar ice bins and fruit flies hovering over(and in)the alcohol. He was mean to the bus staff. He is a chauvanist jerk.What a waste of a great bar and restaurant.
