When you buy a fine dining restaurant and try to turn it into a Golden Corral thinking the current customers will continue coming is a good idea. Then when that dosent work fire the chef and turn it into a club. Again not a good idea. Now you try limping along witha GM who has no restaurant exp. and a chef with even less you try to pass off old dishes and bad service to some dumb as shit owners who try to screw all of their employees over.  to all of the people who work there good luck and keep you resumes out there and keep some tissues close for the chef when she breaks down.

I would double what you say minus what you have said about the chef. The GM definitely makes blind, unacknowledged decisions, but you do have to give the guy some slack, he only works like 15-20 hours a week. Maybe he takes his job home with him, but if he does, he leaves his phone in his work pants because he never answers it. Wearing a suit and writing e-mails doesn’t count as general management. Everything the GM does is proof of his carelessness/incompetence. He bypassed the chef’s hiring process 2x with 3 cooks. Two of them walked out on the job, and the other got fired. That can speak for itself. The restaurant description at blu’s website is loaded with grammatical errors; that minute detail showcases the GM’s claim of fine-dining with proof of his half-assed effort. I understand he graduated from Cornell, well he needs a refund because he sucks. I feel bad for the servers who have to work with a tip system based on favoritism. I especially feel bad for the servers who are stuck serving the GM and his condescending friends who leave NO tip. The entire employee team is a revolving door because the work conditions are depressing and management that is unrealistic,hypocritical and lead by a thief. The chef is an amazing woman who has to, and does, climb Mt. Everest every day. She has single-handedly prevented blu from going belly up with a monster work ethic and culinary talent. Ironically, she doesn’t control the menu or the service. One may ask “Well, what does she do then?” The answer is everything else. Overall blu fucking sucks and its all the owner’s, GM’s fault. The chef preforms miracles every day in a kitchen that has physically and morally broken down.
