I’m a suburban transplant to the city.  Been about five years now.  When I first moved down here I worked for Pluton.  The man is a brilliant chef.  Gifted.  His food is phenomenal.  But he is not a businessman. To wit, three times in three months my paychecks bounced.  And he used my cash tips to apparently pay a vendor.  So I quit.  Granted, I didn’t give notice, but Illinois is an at will employment state, and I was pissed.  They were less than $20 paychecks, if he can’t even make payroll, and he’s using my cash tips to pay vendors, how long is he going to be in business?  About three months after I left they closed.  The best part, when I went in to collect my money - there was a big bag of quarters in a canvass sack for me.  Whatever, douche-bag.  Anyway.  Since that fucking shit-storm I can’t even get an interview in the city.  I’m good at what I do.  I clear +20% from strangers.  I’ve got too much experience.  In this toilet economy is it me?  Or is there a level of food service McCarthyism in Chicago?
