It’s the same story at Le Colonial. The maitre d’ gets a cut of the tip share. and what’s this new trend in Chicago restaurants where you have to tip out the hostess. This is the case at Vermillion and a growing number of restaurants in town. Also at Vermillion when you work private parties the two servers on staff who have worked there the longest go into the office with the manager and decide who gets paid what according to “what each individual contributed”.
Not to mention that the owner of Vermillion specifically instructs the staff to identify the guests with money and “milk them”. Every server there has an $80 per cover expectation and if it is consistently not reflected in your sales you will be banned to lunch shifts as your punishment. This is why their staff turn over is so high

Worst restaurant to work for ever! They have the fattest and ugliest lesbian server called Josie who bullies all the new comers out of there! I guess she can’t get a job anywhere else and she has been working here for 6 years. Also, the owner tells staff to punch out and keep on working which is highly illegal and against the law.

first of all, you did not spell the restaurant name correctly. the spelling of the restaurant is VERMILION, and there is no maitre d’ that works here. I am all for people complaining about places they have worked for that are sketchy and assholes, and well, unfortunately grass is not always greener on the other side, and every restaurant has their shit. and yes, you do have to put up with some shit here, but do your shit and make your money and go home, don’t come in here with some “hero” mentality and try to fix a situation YOU don’t find ideal. to be honest with you, the staff that comes in and out of here are not quality (i.e. shift starts at 4, and the server will twirl in with mcdonald’s bag in hand at 4:10, etc) . also, there is a lot to say about longevity in employment, and unfortunately, you may like to restaurant hop and never make a solid relationship in order for someone to take your 2 cents seriously. hope you finally found somewhere you like, or got out of the industry.
one last thing, when we go into the office after working an event to figure out the money, it is to figure out what time people came in earlier vs. later as well as who is just in “training” (i.e. hired less than one week). it would not be fair to pay someone the same amount that came in at 4pm the same as someone who came in at 7pm, now would it?










I went in to Vermilion for a “shadowing” or and ‘etage’ for an evening about 2 years ago. This is the trend in Chicago restaurants today. You have to fuckin’ AUDITION to be a goddamed waiter! It turned out that they had about 10 other people before me who also auditioned. Now that’s clever! Basically, the restaurant gets a free busboy for the night. Never fall for this!!!!
