If anyone\’s ever said that corporate restaurants is the key to advancement success, they\’re obviously mistaken.  I am a 17 year restaurant veteran, 12 of those years spent in the kitchen.  Out of those 12 years, 7 years have been spent as a kitchen manager of both corporate and \’ma & pa\’ establishments.  Due to the economic hardship that our country have been experiencing, I spent 7 months on unemployment.  I\’ve never been out of work for more than a week at a time.  So I was pretty much desperate.  Out of desperation, I took the first available job, part time or full time that was given to me.  That job was at Ruby Tuesday in Vancouver, WA.  What a horrible mistake that was.  The employees are constantly on \’edge\’ and the general manager is extremely rude and hostile toward the employees, especially his co-managers.  But when his boss, the district manager is there, he is as polite and nice as he can be.  The cooks in the kitchen flip out about everything.  The servers treat the customers like crap.  The incentive given to the employees for their hard work is none.  The pay for cooks compared to the sales revenue is pathetic.  I\’m a 12 year cook with a vast array of kitchen expertise and they only pay $9.00/hr.  Yet they average about $12,000-$20,000 per day in profit.  Now I am graduating with an AAS in Management in June 2010.  So I know how the interior of an establishment works.  Ruby Tuesday is hungry and greedy.  They don\’t want to offer their employees any type of incentives for the work they do.  So because of their attitude towards their employees, I have obtained a better employment opportunity that allows me and my employer to take adavantage of my experience along with my education.  Word of advice, if you\’re new and starting off in this industry, then by all means, go to work for a corporate restaurant.  As your experience grows in this industry, you will find that it is more suitable to work for \’ma and pa\’ establishments.
