The latest on RUI

Since RUI was bought last spring the company has been going downhill. Decisions are made exclusively by the home office based on the bottom line. The investment firm continues to neglect some of the core values of RUI, especially "We hire the best, and care about them."

The worst part is that they don’t see what’s going on. Palisade, once one of Seattle’s best fine dining restaurants, has become a family restaurant where plummer Joe can save up enough money to take out his wife and 4 kids trying the entire time to escape spending as little as possible. They literally send out coupons for $20 3 course dinners that are absolute crap. Before 6pm they offer a "First Seating" menu where guests can pick one starter/entree/dessert, plus a free beverage. Basically the restaurant resembles a geriatric ward before 6pm.

Last week Tom Douglas came into Palisade. He ordered and end cut of prime rib, but it came out looking like a piece of boiled meat. He sent it back for another, only to have the second piece look and taste the same. One can only image the conversations he had with his culinary friends.

Couple of things here. It is actually “plumber” not “plummer”.
I worked for RUI for years. Did a quick stint at Palisades when they opened up in the 90’s and they do in fact rotisserie cook all their prime ribs, not boil them..Most people who order an end cut of prime rib are doing so for the fact that it is a larger, dryer, saltier portion (a poor mans way of filling the belly ie: something I think Tom is not going to order ). Where did you get your info?

As far as working for or eating at any RUI restaurants? I would never ever do it or recommend it but I have my much more valid reasons

Actually, many places ‘warm up’ their prime rib in au jus before serving to make it ‘look’ juicy and meaty, which can cook it a bit more than you want, and indeed make it look like boiled meat. And unless you know Mr. Douglas personally and were there with him when he ordered, you do not know for sure what he might order. He might even order a grilled cheese sammich!
